List Of Approved But Maybe Harmful Food Additives And Their Numbers

Some Food Additives , such as Riboflavin and Ascorbid acid, can have a beneficial effect on the health. These things are food components.

However, many chemicals added to our food, such as preservatives, colourings and flavourings,  are extremely harmful.  Some are proven carcinogens, while some are suspected of causing things like high blood pressure, migraines, alzheimer’s, multiple sclerosis, arthritis, diabetes, and even obesity.

I made sure that I never gave my children commercial products which had any chemical additives in them when they were young.  I think that this is very important in bringing up children today – there is an even greater use of preservatives in food nowadays than there was when I had my children at home.  These poisons are extremely deleterious to the health, and especially to the growing child.

At the very least, some of the  food additives  listed below can have an immediate negative effect on your emotional and mental function.  They can so easily upset the balance of bacteria in the bowel, leading to the proliferation of the ‘bad’ organisms, such as candida albicans which causes yeast infectins.  They can lower your immunity to disease.

Nowadays, as I have just discovered,  I find I cannot eat quantities of cottage cheese because of the preservatives and thickeners which are added to most brands.  Even a well-known Aussie ‘naturally brewed’ has preservatives added to it, which I have found cause headaches and fluid retention.

Recently, I sampled some ginger beer and cottage cheese at a friend’s picnic party. The result next day was similar to a hang-over, with a massive headache, slow brain function and a slight puffiness of the flesh which warns me that the kidneys have taken some punishment.

I am now fasting on home made lemon and ginger root drinks, with some of my cousin’s beautiful New Zealand bush honey added to them. (Actually – cousins’ – there are two of these lovely people who have a farm down at Waikino, where you will find the proverbial ‘land of milk and honey’)

So – what was in these two foods which I had yesterday?  I see immediately that the cottage cheese and the ginger beer both have the same preservative added.  So that probably means that I have consumed much more than what would be considered to be a ‘safe’ dose.

The Ginger Beer Contains good things such as root ginger, natural flavours, and Ascorbic acid, or Vitamin C.  But it also contains some harmful things, which would negate the ‘goodness’ of the ginger, etc. – These potentially harmful chemicals are the preservatives  202 and 211.  202 is Potassium sorbate.  211 is Sodium benzoate.

The Cottage Cheese Contains the same preservative –  202,  which is Potassium sorbate, and Thickeners 407 and 1422.  407 is the thickener Carrageenan which is a natural product, but which causes reactions in some people, so I have read.  The thickener 1422 I am unfamiliar with at this stage.

Anyhow – I am reminded of the fact that it is still imp;ortant for me to be vigilant about keeping foods which have harmful preservatives in them out of my diet.  When you are looking after young children, I think it is easier to remain conscious of food additives, and to keep them out.  When you get older and have no dependents any more, then it is easy to become slack and think that a little bit of this or that will not hurt.  But this is a bad attitude, I know.

Colourings – generally, these are the numbers from 100 through to 163.  Many colourings can contribute to hyperactivity in children, attention deficit disorder, and depression in adults.  They are best avoided.

BBC News gave us this report on the new-found link between Antibiotics and Weight-gain at around 2 AM New Zealand time on the 23 August 2012.  This information will be included  within the context of this article.

The question of whether or not antibiotics and vaccines affect the health of our children is a hot debate, and has been for a long time now.

There is the question of whether or not vaccinations can cause autism – and there are many parents today, including some doctors,  who believe that their children, who were healthy before vaccination, developed autism after being vaccinated.

Then there is the question of whether or not vaccinations are really effective, and how long a vaccination will protect a person for.

The trouble with administering antibiotics willy-nilly to our children is that, in most cases, we won’t know about any negative effects of these drugs until our children are grown up…… when the damage may have been done.

In time, the original vaccinations may have a negative effect on your child’s health, and giving boosters, which seems to be a current trend in some communities, might even make these problems much more acute.

The BBC report said that new research points to antibiotics  as having a marked effect on weight when they are given to very young children.     Vaccinations, which are antibiotics given for the purpose of preventing a disease before it occurs, may in fact  cause obesity in later life.

The research so far shows that  children who had been given antibiotics between birth and the age of five months had an increased weight  between the age of 10 and 20 months. After the age of 2 years, after receiving antibiotics/vaccinations during the first five months of life,  22% of the children are likely  to be overweight.

Exposure To Antibiotics Affects Healthy Bacteria:  This may not be news to those already aware of the damage caused by antibiotics to the necessary microbes which exist in the body.  However, it is welcome news from BBC that scientists have ‘come out’ with the idea that antibiotics do affect healthy bacteria, and that this disruption may even cause obesity.

Scientists say in this new research said that the reason for antibiotics  affecting the weight is because digestion is affected:  Antibiotics and vaccine antibiotics too, affect the healthy bacteria in the body, most importantly, in the stomach, and in the bowel where the absorption of food takes place.  Antibiotics also affect the microbes on our skin, and these microbes, which outnumber the body’s number of cells, is also of interest to scientists studying body metabolism.  This new study is thought to be the first census taken of microbes living on the surface of the body.

Scientists are even experimenting with the idea of faecal transplants, to give back to the body some of the bacteria which antibiotics have taken away.  Faecal transplants have been done with the idea of regenerating the healthy bacteria in the gut. This idea seems very strange:  Why not abandon standard vaccinations which are so problematic to the health, and use homeopathic and herbal and vitamin alternatives instead to counteract the childhood illnesses?  These alternatives do not interfere with the important microbes living in the body, which makes them a safer option.

The trouble is that these modalities, especially homeopathy, are jealously guarded by the pharmaceutical companies who want to remain dominant in the field of medicinal drugs.  These alternative remedies are not given a chance to prove themselves in the orthodox arena of medicinal drugs.

Back to the research on Antibiotics:

The International Journal of Obesity published the findings of a study of 11,532 infants.  This study showed that when these children were given antibiotics under the age of six months, they were likely to be heavier than normal in later years.

So weight gain may be a product of using antibiotics. especially when they are given at a young age, because of their interference with normal bowel function and digestion.

However, they say more work is needed to confirm there is a link.
In this study, children who had antibiotics between birth and the age of five months were slightly heavier between the age of 10 and 20 months. After 38 months they were 22% more likely to be overweight.

Dr Leonardo Trasande from New York University School of Medicine, said that unhealthy diet and lack of exercise were the common factors given as the cause of obesity,  “yet increasingly, studies suggest it’s more complicated”.

Dr Leonardo Trasande said that “Microbes in our intestines may play critical roles in how we absorb calories, and exposure to antibiotics, especially early in life, may kill off healthy bacteria that influence how we absorb nutrients into our bodies, and would otherwise keep us lean.”  Note: This theory is NOT a new one, but it is good to see the orthodox medical people acknowledging that this is so.

Microbiologist Dr Cormac Gahan, from University College Cork, said  that weight could be affected when the balance of gut bacteria is changed…..that this could have ‘”a direct effect on energy extraction” or by ‘”influencing hormones”.

He indicated that there was more work to be done in the area before definite conclusions could be drawn.

Many naturopaths and alternative doctors have had similar theories for years:  There is much written by such alternative medics and natural practitioners which state that antibiotics cause too much havoc in the system to warrant their extensive use during childhood.

Drugs Versus Homeopathy and Some Homeopathic Remedies For Bone Complaints

Homeopathic Remedies are vastly under-rated, mainly due to the bad publicity given them.  This movement against homeopathy is driven by drug companies who are keen to have homeopathic medicines deleted from our list of options.  Drug companies fear homeopathy. If only the truth were known about the efficacy of homeopathy, when the correct remedy is given, then drug companies could find their profits dwindling dramatically.  This is the last thing that they want.  And so homeopathy continues to walk a dusty road alongside conventional pharmaceutical treatments whose companies take the fastest bus to the bank.

Hear Ye!  Hear Ye!…….Nevertheless, there are still a few ‘quacks’ and alternative people about, such as the Queen and Prince Charles, who have used the Royal homeopathic practitioners since day one to cure their maladies.  The Queen Mother used them all her life and lived to be 101.  So, there you go.

Why Are Drug Companies Against Homeopathy? 

The truth is that Homeopathy is inexpensive, as well as effective.  It is only a fraction of the cost of buying your average medication.  It is not harmful to the body.  If the wrong remedy is given, any negative effects can be counteracted by the antidotal remedy, or simply by using the remedy which is better suited to the patient, and which should have perhaps been given in the first place.

Homeopathic remedies are taken only for as long as is needed to cure the complaint.  Generally speaking, as soon as improvement is noted, then the dose is reduced, and soon after,when the symptoms have almost disappeared,  the medicine is stopped.  This scenario is the opposite of what usually happens at the doctor’s office, where people are often given medications ‘for life’, which suits both the chemical manufacturers who make the drug, as well as the doctor himself.

The amount of people over 50 who are ‘on’ drugs for the duration of their lives, such as warfarin, presnozone, Fosamax, etc, is absolutely shocking.  Because most of these people, with the help of their doctor or naturopath or homeopath,  could have CORRECTED the problem initially, making the taking of pharmaceutical medications for life unnecessary.  By adjusting the diet appropriately, by cleansing, by prayer and mediatation, and by using vitamins, minerals, and HOMEOPATHY, many of these over 50’s people could have staved off the taking of medication ‘for life’.

I was once told by a doctor, after I stopped drinking alcohol and was in a bad way because of depression, that I had some inherent mental disturbance which I was cursed with, and so I would need to take amytryptaline for the rest of my life.  I took his prescription home, but the stuff made me feel doped, and so I threw them away.  I have never taken any medications for my nerves in all that time since, which is now 14 years ago. And nor have I ever had any more alcohol, or done anything really terrible.  What’s more, I am happy and content with my life.  If I had believed that doctor, I would be more than a walking zombie by now, with, probably, water retention, arthritis, and obesity.  I have none of these, Praise God.

Anyway – Doctors certainly can be helpful, and sometimes it is necessary to take their medications, such as antibiotics.  But the taking of drugs ‘for life’ is something to be wary of.

We have been conditioned through drug companies’ persistent advertising, which we currently see on television every night, that taking drugs for anything is ‘normal’.  Drugs can easily be bought over the counter for the most common of ailments:  Drugs for cold or flu. Drugs for pain in the head.  Drugs for arthritic pain.  Drugs for digestive upsets.  Drugs for allergies, and sensitivity to plants or chemicals.  Even taking these drugs over a short period of time will be harmful to some part of the body, if not every part.  It seems a tragedy that people are hooked into taking drugs which have the potential to harm them, when Homeopathic remedies could have fixed the problem in most cases, without doing any harm to the vital organs, and without any danger of becoming addicted, which is always a possibility with pharmaceutical medications.

As for long-term medications:  Most of these medications, such as warfarin and fosimax, are not ‘for life’ at all – rather, they are ‘for death’, as they are generally a road to a quicker death through some other break-down of the organs.  The organs, such as the heart, lungs, kidneys, liver, pancreas, and the veins themselves, become weakened as a result of taking these drugs over a long period of time.

Fosamax, which is often given to people with osteoporosis,  is capable of destroying the bone in the jaw.  This condition is called necrosis of the jaw.  Some people have had to have the jaw removed, because the pain from the jaw is just so incredibly awful.  Fosamax is known to cause a weakening of the bones, when it is in fact meant to strengthen them.

Giving Fosamax to people for bone problems seems to me to be down-right irresponsible.  This practice is, in fact, regarded as criminal by many:   There are lawyers in the US who specialize in dealing with Fosamax cases, there are just so many of them.

There is enough evidence to show that Fosamax causes problems with people’s health, and makes them sick in many cases, yet the stuff continues to be prescribed without warning to all those patients who implicitly trust their doctor and the drug companies.

My aunt was given Fosamax a couple of years ago.  She immediately began to experience many of the side effects  of fosamax which were listed on a paper inside the packet:

These were:  Nausea.  Constipation alternating with diarrhoea. Loss of appetite.  Headache.  Bone pain. Etc, etc.  She complained about these side effects to her doctor. The vomitting was troubling her very much.  He prescribed ANOTHER chemical medication to take, to mask the symptoms of nausea, so that she now takes the two drugs – Fosamax, and the nausea antidote.

Suggestions For Some Alternative Remedies For Bone Complaints which my aunt could have tried:

First of all, the diet would need to be looked at.  Help from a naturopath would be recommended, to make sure the diet is rich in alkaline greens, has adequate protein, adequate mineral and vitamin content. Plenty of celery, which is wonderful for strengthening bones, carrots, onions, and green vegetables would be important.  Including two apples a day in the diet, or at least drinking the juice,  would have been very helpful.  Eating fish several times a week would be helpful.  Bone broth stews, such as those made from tail bones, would be nourishing to the bones.  Eating sardines daily as an alternative to meats would be good.  As well as a good diet, the following could have been tried:

More magnesium to help the absorption of calcium.  More calcium-magnesium rich foods such as sesame seeds, sunflower seeds and almonds.

More sun for Vitamin D.  More Halibut liver oil for its Vitamin A and D content.  Vitamin D helps to build and maintain healthy strong bones.

More daily Vitamin C, such as non-acidic Calcium Ascorbate, which  helps to detoxify poisons from the body, helps to renew tissues, helps prevent infection, and also helps keep the blood alkaline.  It also helps to soothe the nerves and encourages a good night’s sleep.  It is a mild sedative and a mild pain killer which helps to heal bones at the same time.

One of the following Homeopathic Remedies may have been helpful instead of taking Fosamax:  Homeopathic Phosphorous;   The cell salts Calc.fluor; Calc. phos; Ferr. phos and Mag phos, and Silica.

Calcarea Fluor.  can help bone pain.  It can also help to stop roughness or nodules appearing on the outside of the bones.

Calcarea Phos. helps to strengthen soft bones.

Ferrum phos is a good one to use at the beginning of a bone disorder, when joints can seem painful and swollen.  This remedy can be taken as a cell salt several times a day for chronic cases, in alternation with another specific remedy for the bones.

These are just suggestions.  You need to seek advice from a qualified homeopath before using these remedies if your problem is serious, to make sure that you are on the right track with the right remedy, or remedies.

 

 

On-Going Chest Pain Is It Lung Cancer?

At the beginning of the year, when we had just so much rain, my lungs began to hurt.   This was also around the time when Saturn went Retrograde, and, unbeknown to me, that my son was suffering the effects of cancer which he suspected he might have.  It turned out that, as well as having tumours about the throat, he had a large tumour in the chest.

So, while I was worried that I may have lung cancer, because of the pain in the chest, my son actually DID have cancer in the chest area.

He had the operation for thyroid cancer only several weeks ago.  His chest was opened up at the same time to remove the tumour there,  which involved an 8 hour operation.  We had no idea about the chest tumour until after the operation, but I think I may have sensed his problem on a psychic level.  It could be that I manifested chest pains in sympathy for his chest problem.  It seems interesting to me that my chest has healed since Saturn has again gone Direct, at the same time my son  had the operation which removed the chest tumour.

Since around January, which was the month my son made several visits to me before his thyroid cancer was diagnosed, my lungs had felt as if they were congested.  Saturn had gone Retrograde. There was an ongoing pain, but no infection came to dislodge the lump I felt was harboured there.   The feeling of suffocation was often with me, and I was often short of breath. I wondered about the health of my heart.

There was a very sore specific spot on the left side, deep within the chest, which the pain seemed to be radiating from.  It was the exact same spot which used to hurt when I was a smoker, which was the main reason I gave up the second-time around, around the age of 50. The first ‘give-up’ of smoking came when I was a young woman, expecting my first child. After that, I did not smoke for 25 years, until I succumbed again to the seductive habit. Giving up smoking the second time around, without a family to spur me into quitting, was very, very difficult. But eventually, I did it.

Back to 2012:  I was so concerned, as the pain was so severe at times, that I went along to the doctor to organize a chest X-Ray.  It was still a possibility that I could have developed lung cancer as a result of chain smoking not so long ago.  Anyway – I got the the X-Ray done, and was very pleased to find out the outcome.  It showed no sign of lung cancer, but the lungs were ‘hyper-ventilated’, to use the doctor’s term.

I don’t like X-Rays, because they are harmful in themselves,  and damage cell tissue.  I thought it  would be a good idea to  do just the one,  to see what the state of my lungs was like, establish whether or not I had cancer, and then get onto an intensive natural therapy of my own to restore the health of my lungs.
I decided that whatever the outcome, I would ‘go natural’. So –

Mainly Raw Food Diet:  Two grated raw apples eaten at one sitting, either in the morning, or as the main meal in the evening.  I cooked plenty of vegetable and mung bean curries, and ate these with a little rice.  Plenty of onions were used in the vegetable curry, as well as plenty of hot spices such as red paprika, ginger and chilli.  Onions are particularly helpful for all bronchial complaints. I ate carrots every day, since my friend Bernhard in Spirit had told me to use carrots daily, either grated raw, or cooked. I did not use any wheat, sugar, or cow’s milk during this time.  I cut down on coffee, but did not cut it out completely.  Soya milk substituted cow’s milk for the coffee.

Carrot and Apple Juice:  I went out and bought a new juicer so that I could drink at least one cup each of  carrot and apple juice per day.  I sometimes added celery or cabbage juice to the carrot juice.

Anti-Viral Remedies: The same day I got the X-Ray done, I went out and bought a whole lot of supplements to tackle the problem.  I bought a range of anti-oxidant products – Multi non-acidic Ester Vitamin C 1000mg – Fish Oil – Evening Primrose oil – and an olive-leaf preparation which had zinc and other minerals in it.  We are generally all short of the mineral zinc in New Zealand, because our soil here is deficient in zinc, and also selenium. These two minerals are very important for the health of the immune system, metabolizing food properly,  preventing cancer, and in keeping viruses at bay.

This olive-leaf mixture was recommended specifically as an anti-viral treatment. I felt I must have a viral infection, if I did not have cancer. I took the maximum dose which was recommended, and even had two or three doses on some days.  By the time I had finished this anti-viral preparation, the chest pain was almost gone.  I also took around 3000mg to 5000mg of the Ester C per day – for around two weeks, during the same period as using the olive leaf remedy.  I alternated the Vitamin C with the olive leaf during the day so that I would get maximum benefit from each. Then I reduced the dose of the non-acidic Vitamin C 1000mg, to just one or two tablets per day. On each day,  I also took one each of the fish oil and primrose oil capsules.  I continued pumping in all of these things for several weeks, until the olive leaf mixture ran out.  Then I relaxed the dose of everything.

After the olive leaf preparation ran out, I began a course of ginseng tablets, in combination with the Vitamin C, fish oil, and primrose oil treatment.

As well, I used a mentholated cinnamon and cedar preparation on my chest each night, with layers of wool, cotton, and a hot water bottle to cover the chest.  This was a Malcoom Harker remedy – but simple eucalyptus and olive oil would do just as well if you cannot get the Malcom Harker.

Homeopathic Remedies:  As well, I took homeopathic remedies to try and release the congestion in the chest.  I found that Thuja taken for one week, and then a week off, when I sometimes used Bryonia, was helpful.  On days when I felt exceptional grief or anxiety, for no apparent good reason at all, I took Arnica-Hypericum for a couple of days.  This helped enormously in alleviating that wierd sense of less which had come over me.

I also took, occasionally – say every 2 weeks – yes – you have guessed it – castor oil.  When I did not feel like taking castor oil, I sometimes used a tablespoon of Epsom salts in a couple of cups of warm water.  Something like once or twice a week, for several weeks.  I bathed the feet a few times in hot Epsom salts – about 2 tablespoons of salts to around a litre of water.

Finally, after around six weeks of this intensive treatment, the chest pain, which was on the left side, in the middle of the chest, and often radiating around to the back, disappeared completely.  Then, quite suddenly, I ‘came down’ with flu, which I welcomed as a cleansing process to end the cycle of bewing unwell.

It is interesting to me that the ‘cure’ of the chronic chest pain happened just after Saturn went Direct, which was just after my son had his operation, and we found out about his extra chest surgery.

I think that it was a virus in my lungs which would not budge without the vitamin, homeopathic, and herbal aids.
Of course, it is possible that the thing might have run its course alone, and I might have gotten better without the naturopathic aids.  But really, the thing went on for so many months I had lost count of how long I had had it, and was only concerned that the ‘wee panic in my breastie’ might be cancer.

I know several people who have had similar symptoms.  I think it is some fierce new strain of virus which has adapted itself so that it can remain in our lungs more or less permanently – unless we summon up enough vital force to conquer it.

Finally getting a real flu, with its accompanying high fever, threw off the last vestiges of this virus. The chest pain which has been there for months, has disappeared completely, and so has the strange and intense feeling of grief.  Praise God and my Angels for helping me to recover so well.  And Praise God and the Angels for taking care of my son and seeing him through his operation.

I am sure that on a psychic level, I was tuning into my son’s illness within his chest, and his anxiety and feeling of gloom, and that this was probably the main reason for my getting such a chronic and mysterious illness.

Saturn Retrograde, combined with my environment, the rain, the winter, my son’s condition, all played a part in this sore chest of mine, I believe. My flat is all concrete – concrete floor, concrete walls, and no sun, which makes it very damp during the winter.  These cold, damp conditions contributed to the persistent chest pain, I am sure.  Should I move?  Saturn is Direct again now.  My son is getting better. Summer is only just around the corner, with all those hot, sunny, languid days on the beach ahead. Mmmmm…..Roll on summer.

My friend Bernhard who is in Spirit tells me that it is still important to use his acupuncture points for weak lungs.  One very good one he has pointed out is on the wrist, just below the thumb.  You can reach this point by interlocking the two thumbs together, and reaching out with your forefinger towards the wrist of the other hand.  It will arrive at an indentation in the wrist which is the location of the Lung 7 point.  You do both hands for this point.  Hold the point for just 30 seconds.  Then stop for 30 seconds.  Then repeat on the same hand once more, for 30 seconds or up to a minute.  Then rest for a minute.  Then do the other hand, following the same procedure. Do morning and night.

Note about Cell Phones:  My son who got the cancer in the chest and in the thyroid, used to often carry his cell phone in the left chest pocket – right over the heart area.  This  happens to be  the same area where I was experiencing the pain.  I hope he is not still putting his cell phone in his shirt pocket.

Note On Fukushima Radiation:  Helen has just commented about the radiation levels in New Zealand at the moment.  This was in response to my post Radioactive Pollution in New Zealand From Fukushima Nuclear Disaster.  I must say that I have wondered this myself.  Thankyou Helen for bringing this question up.  Unfortunately, our environment is probably going to be contaminated from the effects of this nuclear disaster for several years to come.  Radioactive pollution will be weakening our immune systems and causing all manner of mysterious symptoms and viral infections.

Korean Kimchi Is Rich In Lactobacteria And Easy To Make

Recipe For Korean Kimchi

The other day, my daughter sent me a yummy recipe for Kimchi, which is a Korean fermented food, a little similar to the German Sauerkraut. Korean food  is one of the most healthy cuisines in the world, partly because of the Kimchi which usually accompanies it.  I rate Korean food at the top of the list of my favourites, along with  yummy Indian food and its wonderful spices. 

Dining out at our favourite Korean restaurants is relished by our whole family because of several reasons –

First, our Korean hosts are so friendly and welcoming, and the environment so clean and hospitable.  And secondly, the food is just great.  The price is affordable – around $11 or $12 for each main dish, and there is always plenty of it.  The Korean immigrants in New Zealand have certainly contributed much to our Auckland ‘scene’, and made dining out such an affordable pleasure.   I am grateful to my sons for beginning a new family trend – meeting for ‘Korean’ on a Thursday or Friday night.

So – I was excited to get a nice recipe from my daughter, for the Kimchi which we love so much.

Kimchi  is a bit of an acquired taste.  I think I was less keen on the Kimchi when our family first began eating out at what were to become our favourite Korean restaurants in Auckland, at least ten years ago.  But these days, we all head for the Kimchi as soon as it is presented on its dainty little china plates.

At the Nol Bu Ne on Wellesley Street in Auckland, and also at the Ill Mee, which is in Upper Queen Street, you are given at least two varieties of Kimchi, and a host of other tasty treats.  Around six or seven little dishes of accompaniments are put on your table before the main meal arrives.  There is always a sea-weed dish, and sauced potatoes, as well as the Kimchi, and our hosts give us a second helping if they see we have eaten one dish up before the meal comes.

Kimchi is rich in Lactobacilli bacteria, which help the gut to stay healthy.  These friendly micro-organisms provide valuable enzymes aid in the digestion of food, and have lots of other healthful nutrients besides.  Constipation is a thing of the past if you regularly eat Kimchi with your meals.

Of course, if you are currently treating a bout of candida which has taken hold, then you should not eat Kimchi until you have fully recovered.  Some people who are prone to candida infection may not be able to tolerate Kimchi or other naturally fermented foods for some time.  But, generally speaking, once you have conquered the candida, then eating Kimchi on a regular basis should prevent candida infections from returning.  This is because the Lacto-bacilli in Kimchi are a natural anti-dote to harmful bacteria.  Kimchi bacteria have an antibiotic effect on unwanted organisms in the bowel.

For Home-Made Kimchi, you can use virtually any vegetables, but the gist of the recipe is the cabbage.  The following is a fairly standard recipe:

2 heads of Chinese cabbage, or Napa cabbage.  You can use ordinary cabbage if you don’t have Chinese cabbage.

2 Daikon radishes, peeled and sliced finely.

4 or 5 medium size carrots, peeled and grated or sliced finely.

1 bunch of spring onions, chopped finely.

A large chunk of fresh ginger, scraped and grated.

1 cup of chopped garlic

1/4 cup of thick soya sauce

1/4 cup of honey

1 teaspoon chilli powder

1 1/4 cups of sea salt.

Method:  Roughly tear up your cabbage into bite-size pieces.  Cover with water and stir in one cup of the sea salt.  Re-stir the mixture around again in an hour, before leaving to soak overnight.  Next morning, drain off the brine.

Next step – add all your chopped vegetables to your cabbage, as well as the honey, soya, and the remaining 1/4 cup of sea salt.

Mix everything together, making sure that the honey and the salt has dissolved.

Next step – Bruise the vegetables with a wooden rolling pin, conserving the juice to add to the fermentation jar.  Place all the bruised vegetables into a wide-necked  jar, and press everything down well into the jar.

The essence of making good Kimchi is that the liquid always covers the product.  So check your Kimchi daily to make sure that it is weighted down below the level of the liquid.  You may need to make up a little more brine so that there is enough liquid to cover.  Use one tablespoon of sea salt to one cup of water.  The extra brine will dilute the flavour slightly, so only use this if you need to.

Keep a weight on the Kimchi while it ferments in a warm place, such as by the stove in the kitchen, or the hot-water cupboard.  And keep a clean tea towel over the top to prevent fruit-flies and other insects getting into it.

Leave the Kimchi to ferment for  up to a week, then put in the fridge with a lid on.

Begin eating.
