Merrilyn’s Best Garlic Mashed Potatoes Recipe uses special home-made fermented garlic.

The advantage of using fermented garlic is that it has broken down already to a nice, mashable pulp which is easily mixed into your mashed potatoes.  The flavour of fermented garlic made with  honey and apple cider vinegar is less sharp than that of raw garlic.

Many people who cannot digest raw garlic in their food, or even cooked garlic, find that the fermented garlic mixture which is made with honey and apple cider vinegar, actually helps their digestion.  Mind you, it is not for everyone.  If you are currently treating candida infection or you  find it disagrees with you, then don’t use it.

The flavour of fermented garlic with honey is more mild than that of raw or roasted garlic.

Best Garlic Mashed Potatoes Recipe

  • Wash and prepare four to six  potatoes for cooking.  It is best to choose potatoes which are not too large, so that you do not need to cut them up.  This helps keep more vitamins from being destroyed while they are  cooking.
  • Boil your potatoes in a covered stainless steel pot.  Don’t use aluminium, as this interacts with potatoes quite badly. Use a minimal amount of water to cook potatoes nicely.  Do not cover them with water.  About a cup and a half of water whould be sufficient for four or five potatoes.  Put the lid on, bring to the boil, turn down to medium low, so that the pot is simmering, then – Just watch that the pot does not boil dry while they are cooking.
  • While the potatoes are cooking,  roast half a cup of sesame seeds in butter, ghee, sesame oil or  olive oil.  Cook them until they are a golden brown.
  • Mash the potatoes when cooked in the water which they have been cooked in.  This keeps most of the goodness in your mashed potatoes. You get the maximum nutrient from potatoes if you leave the skins on.
  • Add a little sea salt and some butter or  ghee.  Use olive oil instead if you wish to avoid these  dairy products.   Note: butter and ghee are often OK to use by people who have sensitivity to the lactose in milk, whereas  other dairy products are not.
  • Add two tablespoons of your specially prepared fermented garlic and honey mixture.
  • Stir in 1/4 cup chopped coriander ( for about a pint of mashed potatoes) and 1/4 cup chopped parsley.
  • Add the toasted sesame seeds.
  • Stir well, and serve.
